Marcus Chef Honored with Salute to Excellence Award

Chef Brian Frakes, of Marcus Hotels & Resorts in Milwaukee, is honored as the chef recipient for the 2014 Salute to Excellence Awards, presented by the Wisconsin Restaurant Association (WRA) Education Foundation. The Foundation presents Chef Brian Frakes with the Chef Award for his dedication to excellence in foodservice.

With 30 years of industry experience, Chef Frakes is a seasoned Wisconsin chef, strong foodservice leader and industry mentor who is passionate about the development of the culinary arts and education within the foodservice industry. His commitment to teaching and training real life skills and solid technique to the future of foodservice is evident in his role as mentor for high school students involved in the ProStart® culinary arts program. Chef Frakes has also volunteered his time toward foodservice education at Milwaukee Area Technical College, Culinary Institute of America (CIA), Le Cordon Bleu, Johnson and Wales University and Kendall College.

“Chef Frakes is an impressive leader,” said Michael Tscuchihashi of Atlas BBQ in Grafton and Chairman of the WRA Education Foundation board of directors. “He is deeply dedicated to ensuring that the content and style of our industry’s scholastic programs remain current and relevant.”

Chef Frakes is diligent in his service to his industry and his community. In addition to his commitment to promoting foodservice education, he has also volunteered his time toward several worthy causes and has made the following contributions: served on the board of directors for the American Liver Foundation Great Lakes Division; acted as culinary chair for Flavors of Wisconsin, Wisconsin March of Dimes, American Cancer Society and several other organizations; became a recognized spokesman for sustainability and consumption of Wisconsin products; and served as culinary lead for the Wisconsin Department of Tourism.

“Chef Frakes is passionate about the restaurant industry and education,” says Bryan Mowry, Executive Director of the WRA Education Foundation. “Throughout his career, he has been a consummate professional, industry mentor and community leader.”

The WRA Education Foundation proudly presents Chef Brian Frakes with the 2014 Salute to Excellence Chef Award.

Each year, the WRA EF recognizes five individuals and one company for dedication and commitment to education in the restaurant industry as Salute to Excellence honorees. Other 2014 Salute to Excellence honorees include: Kevin McGuinnis (Madison College, Madison); Diane McKenzie (Madison West High School, Madison); Chico Pope (Buckhorn Supper Club, Milton); Amy and Ryan Scheide (Great Expectations, Wisconsin Rapids); and EWH Small Business Accounting, S.C., Waukesha. Each honoree creates opportunities for people interested in foodservice industry careers. They have worked in a variety of roles, in different parts of the state, but they share an enthusiasm and optimism for the future of the restaurant industry.

The Salute to Excellence awards are presented at the 2014 Celebration of Excellence on Sunday, October 19 at Lake Lawn Resort in Delavan. More information on the event is available at www.wirestaurant.org.
